Cambridge Blue With Parma Ham And Chocolate recipe

A little weird, but so delicious!  – What to eat with cheese? Many like it just plain, others like it with chutney or a pickle. The South African’s either eat it with preserved green figs or watermelon. All of this is delicious, but what about cheese and chocolate? It is not the first choice, which springs to mind. However, I prefer using goat cheese in a chocolate ganache as it gives it a much lighter taste.

The other day I came across bacon dipped in chocolate. My first thought was; they must be joking. It did intrigue me though and much to my surprise it is actually a very interesting combination. The recipe of Cambridge Blue with Parma ham and chocolate below is inspired by my love of cheese, chilli and my bacon and chocolate find.

Ingredients for 2

Chocolate

100 gr. of dark chocolate
1 tsp of dried chilli flakes
Melt the chocolate  and mix in the chillies

Parma ham

1 rasher of Parma ham
Dip the ends in the chocolate sauce. Put 2 skewers on baking paper and let them rest on here in the fridge until the chocolate is hard. It only will take about 10 minutes.

Serve with

Cambridge Blue (or creamy blue cheese)
