Shredded Chicken With Chocolate In Phyllo Pastry recipe

A Slimline Treat – I am sure you have heard of shredded pork, which is very popular at the moment. But shredded chicken? Yes, indeed! And guess what? This delicious dish is very easy to make, very healthy, has a hint of chocolate and contains less than 300 calories! Shredded chicken with chocolate in phyllo pastry is a little bit of a naughty dish, which is good for your diet too. Yes, it is possible.

Ingredients for 2

Chicken

2 filets of chicken
Stock
Poach the chicken in the chicken stock and let it cool off ( you can do this in the morning or the day beforehand)
When it is cooled off, shred the chicken with your hands into a bowl

For the filling

3 sheets of phyllo pastry
1 tsp of butter
1 chopped white onion
1 yellow pepper cut into pieces ( not too small)
1 small red chilli chopped
1/2 tsp of minced garlic
1/2 tsp cumin seeds
1/2 tsp coriander powder
1 tsp of light brown sugar
1 tsp of chopped dark chocolate
4 tsp of peri-peri sauce
1 egg, slightly beaten

Serve with

Crisp mixed green salad
1/2 pomegranate
2 tablespoons of balsamic vinegar
1 tablespoon of olive oil
Dash of lime juice

How to make it?

Start by preparing the chicken as described above. Preheat the oven to 180 degrees.

Then fry the onion and pepper until soft. Add the cumin seeds and the coriander, fry slightly, add the sugar, chocolate and chilli sauce. Mix and fry for 1 minute. Add the chicken. Heat through and turn off heat.

Depending on the size of the sheets, cut the sheets in half. Put 2 halves on a baking tray, baste with the egg, put on each another half sheet, repeat and then add the last one. Spread the chicken mixture of the phyllo and make them in nice parcels. Baste the parcels with some of the egg mixtures. Pop them into the oven and it should only take about 15 minutes to brown the parcels. Ready to eat.

For the salad; Mix all the ingredients apart from the salad together. Once you are ready to serve, you sprinkle the dressing over the salad.

Delicious with Greek goat yoghurt.
